Homemade Besan Sev Recipe | Crispy Gram Flour Noodles




Besan Sev or Besan Ki Bhujia is a spicy and crispy snack made from gram flour. This sev is typically thick in texture. The recipe is easy to make by mixing gram flour, red chilli powder, salt, and carom seeds in right amount and kneading into a sticky dough to give it a spicy and crispy texture on frying. There is no particular shape of this sev, they are in the form of long noodles which later broken down into small pieces.

There are many variation of this recipe also. Some people add rice flour in it to make it slightly hard,  called murukku or kara sev, which is typically famous in southern part of India.

This Besan ki Sev is a good accompaniment with tea. It is also a popular festival snack, specially Diwali, where people make it in advance so that they can present it in front of guests. And the main advantage of this sev is that you can store it in an air tight container for about a month.

Prep Time:  8-10 minutes
Cook time : 20 minutes
Serve : 2.0-2.5 kg

Ingredients

1.5 kg gram flour (Besan)
70 ml oil, for kneading
3 tbsp salt
4 tbsp red chilli powder
2 tbsp carom seeds
oil, for frying
water, for kneading

Method

1. Pour hot oil (not boiling) on gram flour and mix well with ladle.

2. Add salt, red chilli powder, turmeric powder, and carom seeds. Mix well using hands so that no lump remains there.

3. Add water and knead it into a dough. The quantity of water should be such that the dough stick to your hands.

4. Using sev maker machine, fry the noodles in oil till golden brown.

5. Serve with tea.
